Gaskets dry out. Water pumps the packing fails have to look at that before installing. NOS carb obviously will need a look at. Gaskets and accelerator pump dries out.
Some parts are not worth installing unless you have to, like engine bearings the bearing material of today is far superior as is piston ring material.
Bit of common sense goes a long way. Like someone pulling a seal off the shelf that has sat for 50 years do you want to risk an engine or rear end to that. I look at ease of replacement. If its a pain to replace try and install new.

What you say is true. Gaskets, packing and seals can dry out and modern engine parts are made of better materials. Along those lines, I'll add anything made of rubber such as hoses, vacuum diaphragms, wiper blades, weather strips and plug wires. I'd also add ignition coils and radios.
